I like this recipe – I first discovered it about 10 years ago and keep coming back – mostly because a lot of supermarkets sell diced turkey thigh really cheap for stirfry and curries. I’ve even used left over turkey from Christmas before now – but my favourite for that is a slow cooked turkey curry….
The ingredients are again simple….
1 pack of casserole vegetables
or if you want to feel the vegetables in your hands a selection of carrot, turnip, onion and potato, you won’t need a lot – just one or two of each of them except the onion.
